I am not the kind of person who talks about or posts their food, but I had to share what I whipped up for dinner…
Fair warning: it is not vegan! I had leftover lamb from my “cheat” gyro, and had to find a use for it.
Also, side note: I was raised to believe that any dish that was a mish-mash of ingredients was called goulash – my apologies to those who know what that dish actually is; and how not even close this recipe will come.
Gluten free lamb goulash:
(I don’t measure things, unless I’m following a recipe)
- Zucchini noodles (as many as you think you’ll need)
- Olives (about 1 can. I used black)
- Gyro seasoned lamb (I’m sure other meats would work here)
- Feta (maybe 1/4 cup)
- Grated Parmesan (about an 1/8 cup)
- Small amount of dressing (I used ranch, but tzatziki would have been better)
Reheat the lamb – slowly simmer in a bit of water, with lid on, until hot.
Zucchini noodles should be gently steamed for just a couple of minutes.
Add olives (break them up if whole).
Add hot lamb.
Cover for 5 mins or so, until everything is roughly the same temperature.
Add dressing and toss to coat.
It is super simple, and sooooooooooo good! Filling but not grossly so, and did I mention – yummy! Perfect amount of texture and taste!
Forgive me, but I was so excited to have created something so yummy from scratch (that doesn’t happen to me very often), that I HAD to share. The taste reminded me of pizza… Oh, this would be so good on a pizza with some tomato chunks (sun-dried!?)! Or also, in a pita, on brushetta, in a sandwich, on top of greens… the list is endless.
Also, goes great paired with wine or cider!
